Instructions
Trim off excess skin, separate the meat from the bone, and make two slits about 1 inch in length and half-an-inch deep on the skin side
Add the chicken to a bowl with the rest of the listed ingredients; mix well
Cover the bowl and marinate in the fridge for at least two hours but preferably overnight (optional)
Preheat oven to 400°F
Place chicken on a wired rack and bake for about 45 minutes
Cook until internal temperature is 165°F-180°F
Allow chicken to rest for 10 minutes
