Banana Bread (vegan, nut free)

Optionally add walnuts, chocolate chips, pumpkin or sunflower seeds, etc.
Instructions
Preheat oven to 350 °F; place parchment paper at bottom of bread pan and grease
In a large mixing bowl, add in bananas (3 large); mash with a fork until a smooth paste with only small clumps if any
Add in oil (⅓ cup), vanilla extract (2 tsp), maple syrup (2 Tbsp), and mix well with spoon or spatula
Add in flour (1 ¾ cups), sugar (⅓ cup), baking powder (2 tsp), baking soda (1 tsp), salt (⅛ tsp), cinnamon (1 tsp), and mix with spoon or spatula until just barely incorporated; do not overmix (a few lumps is fine)
Pour batter into bread pan and bake for 40-50 minutes; use a toothpick after 40 minutes to check doneness (toothpick should come out clean when bread is done)
Remove bread from oven and allow to cool in the pan on a heat resistant surface for 10 minutes
Remove the bread from the pan and place on a cooling rack for an additional 10 minutes (can just use a cutting board if you do not have a cooling rack)
Slice the bread and enjoy

Can store in an air-tight container at room temperature for 5 days, in the fridge for 7-10 days, or in the freezer for 3 months
